Beets and Eggs

This recipe is a holiday tradition in my family.


Instructions:

  1. Hard boil and peel the eggs (let them cool before peeling)
  2. Combine the sugar, beets (including the juice), and vinegar in a pan, bring to a boil.
  3. Put eggs in a one gallon jar, pour the vinegar, beets and sugar mix over the eggs, add food coloring.
  4. Allow to cool before putting in the refrigerator.
  5. Leave in the refrigerator for 48 - 72 hours (with the lid on of course.)
