Beets and Eggs
This recipe is a holiday tradition in my family.
- 2 dozen eggs
- 3/4 - 1 cup of sugar
- 2 - 3 cans of sliced beets
- 1 qt cider vinegar
- 8 - 10 drops red food coloring
Instructions:
- Hard boil and peel the eggs (let them cool before peeling)
- Combine the sugar, beets (including the juice), and vinegar in a pan, bring to a boil.
- Put eggs in a one gallon jar, pour the vinegar, beets and sugar mix over the eggs, add food coloring.
- Allow to cool before putting in the refrigerator.
- Leave in the refrigerator for 48 - 72 hours (with the lid on of course.)
